Baked Turkey Meatballs

1 pound ground turkey
1 egg
1 c Italian bread crumbs
1/4 c chopped parsley
1 t minced garlic
2 T tomato paste
1 t salt
1 t pepper

Preheat oven to 400 F. Grease sheet pan.

In a bowl, mix all ingredients together with your hands.
Roll into ball form and place on pan. Bake until golden brown
or about 25 minutes.

Makes about 18-22 meatballs.

Serve with Euna Mae's spaghetti sauce (found at: www.eunamaes.com)
and wheat pasta

CCC...favorite cookies!

2 1/4 c all purpose flour
3/4 white sugar
1 c dark brown sugar
2 large eggs
1 1/2 t pure vanilla
1 1/4 t salt
1 1/2 t baking soda
1 stick melted and cooled butter
1 1/2 c semi sweet chocolate chips

Preheat oven to 375.
Melt butter in microwave, set aside to cool
In a mixer, combine sugars, butter. Mix well
Add in vanilla and eggs. Mix well. No lumps
In a small bowl, add four, baking soda and salt.
Whisk together then add to mixer until combined.
Add chocolate chips and mix. Scoop out.
Bake 11 minutes and cool.

Parmesan Chicken Salad

1 bag of Sam's Club-Mesquite grilled chicken (pre-cooked)
1 1/2 c mayo
1 t olive oil
1 t lemon juice
1 T pre-minced jarred garlic
1 1/2 c chopped parsley
grated parmesan
croissants

Defrost chicken and chop into small cubes.
In a small bowl, combine the mayo, olive oil, lemon juice and garlic.
Mix chicken, liquid mixture, parsley and parmesan. Serve on croissants.

Santa Fe Chicken Salad

6 cups mixed baby greens
1 15 oz corn kernels, rinsed
1 15 oz black beans, rinsed
1/4 c monterey jack cheese
1/4 c sharp cheddar cheese
1/4 c spiced tortilla strip salad toppers
4 thin sliced chicken cutlets
1 c  garlic herb marinade (KC Masterpiece)

Marinade chicken for 3 hours
Make dressing and refrigerate

  Dressing:
1/2 c light mayo
1 t chili powder
1/4 c chopped cilantro
3-4 T chopped onions
1 T lime juice
2 t white sugar

Grill chicken. Rinse corn and beans.
Plate lettuce. Layer with corn, beans, cheese
and tortilla strips. Place chicken on top with
dressing

Chicken Fajitas

Chicken breasts, sliced into strips
1 onion, sliced
2 green bell peppers, sliced
2 other peppers, sliced

Seasoning:
1-2 t cumin
1 t chili powder
1/2 t garlic powder
1 t black pepper
1 t salt
2 T olive oil
1 t lime juice

Mix seasoning. I usually double it. Pour 1/3 over veggies. Stir well. Freeze or marinate over night. Pour other 2/3 over chicken. Stir well. Freeze or marinate over night. I also have cooked it immediately and it is yummy! Serve with salsa and chips. 

Cook veggies first then remove. Cook chicken then add veggies back at end before serving.

Mexican Salsa

2 cans whole tomatoes (28 oz) drained
1 8 oz can tomato sauce
1/2 onion, finely chopped
1 tsp cilantro
1 tsp cumin
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
Jalepenos to taste (about 3 or 4)

Use a blender to blend ingredients. Mix half at a time.

Italian Spaghetti Sauce

3-4 cans crushed tomatoes (28 oz size) 
4 cloves garlic
3-5 T basil
1-2 tsp black pepper
1 T sugar
2 T olive oil
1/3 c grated Parmesan or Romano Cheese
Minced green onion (optional)

Heat olive oil over medium heat, add garlic. Stir for 1-2 min, making sure not to burn garlic
Add all tomatoes & spices
Bring to boil
Simmer 2-3 hours. Add a lid halfway thru
Add cheese and simmer last 5 minutes
Will make 4-5 jars of sauce.

Turkey Meatballs

1.5 lbs ground turkey
3 cloves of garlic (pressed or minced)
1 egg
1/4 cup breadcrumbs (I used Italian)
1/3 cup dried parsley
1 T dried basil (I used fresh from my garden)
1.5 tsp seasoned salt (I used sea salt)
Black pepper


1. Combine all ingredients except turkey. 
2. Add turkey and mix with hands. 
3. Form into small balls and placebon cookie sheet. 
4. Bake at 400 for 15-20 min. 
5. Serve with sauce


Makes about 20 meatballs

Cucumber Dip

8 oz sour cream
8 ozz cream cheese
1 pkg dry Ranch dressing mix
1 chopped cucumber
chopped green and purple onion to taste

Mix and chill.

Smore Cake

3/4 c butter
3/4 c brown sugar, cook both of these until they are a caramel sauce

Pour over graham crackers in baking dish. Cook on 350 until bubbly. Top with marshmellows, chocolate chips and Hershey pieces. Return to oven and toast until marshmellows are browned and melted. Let cool and serve!

Cafe Rio Chicken

2 lb chicken breasts
1/2 a small bottle of zesty Italian dressing
1/2 T minced garlic
1 pkt of dry Ranch dressing mix (mix with 1/2 c water)
1/2 T chili powder
1/2 T ground cumin
Place all ingredients in the crock pot. Cook on high 5-6 hours or low 8 hours. Shred. Serve with tacos.

Water Punch

5 qts chilled water
3 c sugar (or half splenda, half sugar)
1 T lemon extract
1 T citric acid (found in spices aisle)
fresh lemons and limes

Mix all ingredients. Stir until sugar is dissolved
Add Citris slices for decoration. Serve with Sonic ice:)

Shredded Pork Loin Roast, crock pot style

1 (5 lb) pork loin roast
1 bottle of Sweet Baby Rays BBQ sauce
1 can Dr Pepper
onion powder to taste
garlic powder to taste

Place roast in the slow cooker, season with onion and garlic powder. Cover with BBQ sauce and then pour Dr. Peppeer over the roast. Cook on LOW 6-8 hours until the pork is tender. Shred with forks.

Tomato & Chicken Saute

I made up a recipe last night and it was a hit!! Just need to make more next time!

4 chicken breasts, sliced in half horizontally
2 T canola oil
3/4 cup chicken broth
I can stewed Italian tomatoes with basil & oregano
3 t butter
Salt & pepper

Slice chicken into thin pieces. Salt and pepper chicken. Fry in oil until browned and finished cooking. Remove chicken. Pour in chicken broth and scrape pan to loosen up the crisped pieces that were left from the chicken. Add the canned tomatoes, butter. Cook until tomatoes are tender and can be mashed up. Add chicken back to skillet and let it simmer for about 10 min. Remove from heat.

cookie 'n oreo brownie bars

I found this recipe on Kevinandamanda.com. She always has the best recipes!

She call it: Ultimate Chocolate Chip Cookie 'n Oreo Fudge Brownie Bar

1 c (2 sticks) butter, softened
1 c sugar
3/4 c lt brown sugar
2 lg eggs
1 t vanilla
2 1/2 c self rising flour
2 c milk chocolate chips
1 pkg double stuff oreos
1 family size brownie mix
1/4 c hot fudge topping

Cream butter and both sugars in large bowl. Add eggs and vanilla and mix well. Slowly add flour. Stir in chocolate chips. Spread cookie dough in bottom of a 9 x 13 dish (she lined with wax paper and sprayed with pam but I just used my stone dish and it didn't stick)
Top with a layer of oreos.
Mix brownie mix according to directions. Add the hot fudge topping and mix well. Pour over cookie batter and oreos. Bake and 350 degrees for 45-55 minutes.
Serve warm and top with vanilla ice cream!
You can also half the recipe for a 8x8 brownie mix!

Chocolate Chip Pound Cake

1 yellow cake mix
1 (3.9 oz) chocolate pudding box
1/4 c water
1 c vegetable oil
4 eggs, beaten
1 c sour cream
1 t vanilla
1 c milk chocolate chips

Mix all ingredients, stir in chocolate chips. Pour batter into greased bundt pan. Bake at 325 degrees for 50-60 minutes.

I saw this on another blog (can't remember which one tho) and it is soo good!

Crispy Tacos

This a recipe I got from Pioneer Woman but I made it my own and it was delicious!!!

1 pkg flour tortillas
4 whole boneless,skinless chicken breasts
1 pkg taco seasoning (I used half a packet)
1 can (4 oz) diced green chilies

Cut up chicken in small pieces, brown in skillet with a little oil, the green chilies and sprinkle taco seasoning on top. Stir and cook until chicken is done. Remove from heat and set aside.

Heat a couple of inches of canola oil in a skillet. Fill each tortilla with a spoonful of the chicken mixture. Place in oil and help hold the fold over part with a fork or tongs. Once it can keep it's own shape, start another. Fry until golden brown. Hold taco sideways and let oil drip out. Drain on several paper towels.

Once they are fried, pry open the top and add: sour cream, shredded cheese, lettuce, tomatoes, taco sauce

Baked Pork Chops

2 center cut pork chops
1 pkg dry onion soupp
1 (6oz) box long grain wild rice
3 cups water

Preheat oven to 350 degrees. Brown chops in a skillet sprayed with Pam.
Over medium heat, mix rice, soup and water in a 9 x 13 baking dish. Lay browned pork chops over the rice mixture. Cover with foil and bake 1 hour.

Yummy!!

Crayon Hearts

These are not food, but fun to make as Valentines! First, umwrap Crayola brand crayons, break into little pieces.
Then put the little pieces into a flexible heart mold (spray with cooking spray because it makes it easier to pop them out)
Melt them on 250 until all pieces are melted, remove from oven. Let them cool and become hard again.
Last, pop them out and let them finish cooling on a towel.
Then, you have heart shaped crayons to give your Valentine!! We made little tags that said, You color my world (with a picture of the Earth)
